Ingredients
– 5 hard-boiled Ayur eggs
– ¼ cup of mayonnaise
– 2 tsp fresh lemon juice
– ½ cup finely chopped coriander
– ½ cup red bell pepper
-½ cup lettuce leaves
-Salt and pepper

Instructions
Peel the Ayur egg shells and slice them in into 4. Mix it with mayonnaise, lemon juice, coriander, lettuce, bell pepper, salt, and pepper in medium sized bowl. Mix well and refrigerate in a closed container to seal the flavours.

This easy peasy egg salad will give you the required nutrients in less than 20 minutes. Best served with lettuce eggs cause Instagram (duh!).

Egg & Potato Salad

Ingredients
– 2 hard-boiled Ayur eggs
– 5 boiled potatoes
– 1/4 cup mayonnaise
– 1 tsp. Dijon mustard
– 3 sun-dried tomatoes
– 2 tsp fresh lemon juice
– ½ cup finely chopped coriander
– Salt and pepper

Instructions
Peel the potatoes and Ayur eggs and add them to a large bowl. Mix mayonnaise along with Dijon mustard, sun-dried tomatoes and mix well. Mix well and refrigerate it a closed container to seal the flavours. Sprinkle some salt and pepper and garnish it with coriander leaves and voila your delicious egg and potato salad is ready!

Egg & Chickpea Salad

Ingredients
– 4 hard-boiled Ayur eggs
– 400 gms Chickpeas soaked in water for 8-10 hours
– 2 tbsp. Olive Oil
– 2 finely chopped spring onions
– 2 tbsp vinegar
-Salt and pepper

Instructions
Soak and wash the chickpeas and boil or pressure until 4-5 whistles and drain it. Peel the Ayur hard boiled eggs and slice them into in small pieces and mix along with the chickpeas. Add chopped spring onion, vinegar, salt, and pepper to enhance the taste.

Keep this aside for 10 minutes and gorge on the yummy salad that doubles up as breakfast and side dish with burgers and fries.

Egg & Greek Yogurt Salad

Ingredients
– 4 hard-boiled Ayur eggs
– 2 hard cooked egg whites ( discard the yolks)
– 3/4 cup diced celery/coriander
– 1/4 cup plain non-fat Greek yogurt
-1 tsp dijon mustard
-Salt and pepper

Instructions
Peel the Ayur eggs and slice them into small pieces. Add the greek yogurt and dijon mustard along with salt pepper for taste. Refrigerate and you are done!
This egg salad is perfect for people who are health conscious and tastes absolutely great without the mayo too!

Soft Boiled Egg & Asparagus Salad

Ingredients
– 4 soft boiled Ayur eggs,
– ¾ finely chopped asparagus
-1 teaspoon dijon mustard
– white vinegar
– 2 tsp lemon juice
-Salt and pepper

Instructions
Soft boil the Ayur eggs and let the yolk be a little runny. Mix it with finely chopped asparagus, dijon mustard and lemon juice in a bowl. Add salt and pepper to taste. It’s a delicious brunch or side salad for a special occasion or just celebrating spring.
