Gajar Ka Halwa in Less than 30 Minutes for When You Just Carrot Wait

Carrot cakes and zucchini bread may come and go, but a well-prepared bowl of gajarka halwa has the ability to trump all fancy dessert options out there. We’ve seen our mothers standing at the stove and stirring away at the milk and khoya for hours until it breaks down all that grated gajar, and serve us steaming portions of some sweet heaven.

Ingredients

Grated carrots {2 cups} Milk {1/2 cup} Sugar {5-6 tbsp} Fresh khoya/mawa {1/2 cup} Ghee {1-2 tbsp} Cardamom powder {1/2 tsp} Almond, pistachio, and cashew slices {2 tbsp} Cream {2 tbsp – optional}

Method

In a microwave safe bowl, add the ghee and grated carrots and microwave on high power for two and a half minutes.

Take the bowl out, add milk, sugar, khoya, cream, and cardamom powder and then microwave the mix for eight to nine minutes on high power.

Allow the mix to stand for five minutes.

Garnish the gajar ka halwa with slices of almond, pista, and cashew nuts.
