Brownies and IBS are my achilles heel {sorry, sorry, I know, TMI}. So when I heard about a gluten-free, grain-free, vegan brownie bakery, I was all ears. Enter, Blackbird Bakery.
This New Friends Colony based bakery started recently, and describe themselves as "baked indulgences for the health-conscious". The only dessert I found while browsing through their Instagram page {@blackbirdbakeryindia} was brownies- vegan and grain-free, in all their glory. They currently offer brownies in four iterations- Classic Walnut, Beetroot, Peanut butter millet, and Sweet potato. They are all gluten-free; and can also be vegan, low GI, and paleo based on what you order. I ordered the peanut butter and classic walnut brownie for a dinner at my house, and my friends and I loved them.
I'm always skeptical about how "healthy" brownies will turn out because I've tried a bunch of them, and they're usually super dry with an almost-cardboard-like texture. Blackbird brownies on the other hand? Gooey and delicious. Depending on the brownie, they use millet {ragi}, cacao powder, almond flour, nut butter etc- all super healthy ingredients- while managing to make the brownie ACTUALLY taste like a brownie. The peanut butter brownie was most definitely my favourite- not too sweet, the right amount of peanut butter, and perfectly moist. Also, brownie points {pun intended} for their small-batch, made to order approach.
