Brace yourself for some serious teekha with the Telangana Chilli Chicken- a zingy twist on an old classic that is certainly not for the faint-hearted. A milder warmth is delivered by the comforting Kathmandu Lemony Stir Fry Soy {there is also a pork version of this, but the soy wins for sheer novelty value}, which has just the right marriage of tang and tart, and transports you to a road trip in the hills.

Our winner for the night though is an unlikely pick – the humble momo gets a very upscale makeover at Birdie and emerges all juicy and tender tucked in with delicate smoked salmon and potato. These parcels of pure pleasure pair well with a pepper chutney and a spicy peanut one that come with it. The potato and pea version of this is just as divine.

If you’re still peckish, we suggest you carb up with the Chem Datchi, a spicy version of the classic Bhutanese cheesy stew that is served with steamed tingmo buns and can be savoured with your choice of veggies or meat.

Birdie’s forte has always been beautifully balanced and smooth drinks, and so prep yourself for some serious mixology. We loved the Adam, Eve and Birdie, a cocktail that combines white rum with red apples, cinnamon and the body of egg white and is good enough to be like a boozy dessert.
