Started in 1975 by Shankar, a former mill worker, the vada pav used to initially be sold from a hand cart till business picked up enough for him to buy a shop in the same location some 22 years ago. Today, his son Vinayak is now running the show, but some things, like the items on sale, have remained unchanged.

At a time when most older establishments are being forced to reinvent themselves and innovate with fusion introductions to their menu in order to survive, Shankar Vada Pav still makes roaring business selling the same three products as he did right from the start – Vada Pav {INR 15 and INR 12 for single vada}, Moong Dal Bhajias {INR 15 for bhaji pav and INR 30 for a plate of bhajias} and Mirchi Bhajias {INR 12 for Mirchi Pav and INR 4 for a Single Mirchi).

Quality and consistent taste, his son says, is what matters more than a long winding menu. Obviously, the formula has worked wonders, with the stall managing to sell about 500-600 vada pavs and about 100 plates of bhajias daily, with a loyal fan following from across Mumbai which includes the likes of Bollywood actor Ranveer Singh who has been a regular since his childhood. The trick to consistency? The raw aloo patties have been prepared by Shankar’s wife since the start and till date, which are then fried as per order at the stall. Double-frying the vadas ensures extra crispiness, while no onion and garlic brings in a wider customer base.
