We’ve found some simple recipes to spruce up your dessert post-dinner. Summer’s here in all its glory and we’ve found some ways to tolerate the heat and make every day seem a bit sweeter.

Not a fan of fruits? Use them to make these desserts and other amazing recipes: 

Watermelon Jelly

Time Required: 30 minutes

Ingredients: Watermelon, sugar, lemon juice, gelatin, mint leaves and water

This jelly is refreshing, light, cold and so much better than the store-bought version. Plus, we got to play around with gelatin and the process of making it was fun overall. We recommend you use fresh watermelon for maximum flavour.

Fruit Cocktail

Time Required: 5 minutes

Ingredients: Cream, yogurt, Rooh Afza, Mango, Pomegranate, Grapes, Honey, Orange, Apple, Banana, Dry Fruits, Cherry, Vanilla extract.

This cocktail is a sweetened, more delectable version of a fruit bowl which often seems too bland. Try this cocktail when you strive to incorporate fruits in your diet but don’t know how to make the commitment.

Coconut-Glazed Mango Ginger Pop-Tart

Time Required: 45 minutes

Ingredients: Mango, ginger, sugar, egg, butter, all-purpose flour, coconut milk, shredded coconut, sugar, salt and water. 

We’re in awe with how well these flavours work with each other: the sweetness of the mango, the tinge of ginger paired with a buttery crust and coconut shavings on top! Try this Pop-Tart at home, you will not be disappointed.

Orange Cheesecake

Time Required: 25 minutes (overnight to chill)

Ingredients: Oranges, digestive biscuits, butter, curd/cream cheese, mascarpone cheese, sugar, milk, double cream.

This cheesecake is easy to make and you can make it with your kids as well. In case you don’t have cream cheese, swap it with regular heavy cream as an easy substitute. We recommend using fresh oranges and add a zest of ginger to enhance the taste.

Jackfruit Pancakes

Time Required: 30 minutes

Ingredients: Jackfruit, sugar, all-purpose flour, milk, ghee/butter, everyday spices

If you wish to not have cold desserts, this one works well. We aren’t a fan of jackfruit but these pancakes make them a lot tastier. Try these pancakes if you want dessert for breakfast or if you’re in a sour mood!

Yoghurt & Brown Sugar Panna Cotta With Grape Jelly

Time Required: 30 minutes (overnight for chilling)

Ingredients: Gelatin, grape juice, lemon juice, red/black grapes, vegetable oil, cream, brown sugar, yoghurt and salt.

Yes, there is a lot going on in this recipe but it all matches perfectly taste-wise. Super creamy and light, we recommend this for all those who don’t like desserts dipped in sugar.

Apple Pie

Time Required: 55 minutes

Ingredients: Apples, lemon juice/vinegar, sugar, all-purpose flour, eggs, butter, cream, vanilla extract, brandy (optional), everyday spices.

We were a bit foreign to the concept of raw apples in our dessert, but making this was the best decision we made all summer. We suggest you use green apples for the tang rather than red. Make sure you have cinnamon powder as it really makes a difference.
