Bombay Cuisine Ditches The Thali & Jumps Onto The Buddha Bowl Trend At This Parsi Restaurant Pop Up

Sindhi Kadhi, Gujarati Dal Dokhli and Maharashtrian Koli Fish Curry all get a trendy makeover, thanks to SodaBottleOpenerWala’s Bombay Buddha Bowl pop up, ongoing till December.

What is a Buddha Bowl you may ask? They are those ridiculously, good looking overflowing bowls of single portioned full meals, which have been taking over everybody’s Instagram feeds for quite a while now. Bringing this trend but with good old desi regional dishes is SodaBottleOpenerWala on Lavelle Road. The bowls and concept have been put together by the restaurant in collaboration with food consultant Rushina Munshaw Ghildiyal. So you can tuck into a Sindhi bowl, a Gujarati one, Maharashtrian, and an East Indian one {this one has been put together by Chef De Cuisine Danesh Vakshoor} — all of this covers the cuisine of Bombay to an extent. So, basically, all elements, flavours and textures of a thali are transformed into a Buddha Bowl concept. Plus, it looks so pretty too {see image}.

Bowled Over

Start off with the Sindhi Bowl, inspired by typical Sunday meal for the community with brown rice, sai bhajji, aloo tuk, papad pasta, teewan papad samosa, stir-fried greens and Sindhi kadhi, of course. This is finished off with guvar {cluster beans}, bhindi, bhee {lotus stems} crunchies and boondi. Up next is the Gujarati Bowl with methi and potato-stuffed ravioli dhoklis {inspired by Gujarati Dal Dhokli} accompanied by a wilted onion salad, greens, boaria marcha drizzle and a candied peanut relish. Plus, all of this brought together by a sweet and tangy Gujarati dal and topped with a papad cheese crumble.

Non-vegetarians, you can pick from the Maharashtrian Bowl made up of red rice, spicy prawn modaks, coconut salad, greens and jawla or a dried shrimp chutney, accompanied by a Koli-style {the fisherman community} fish curry topped with a peanut thencha and poha papad. And how can we talk about Mumbai, without talking about East Indian cuisine from Bandra. The East Indian Bowl comes with wedding rice, pork vindaloo, bombil fry, chicken potato chops, all dressed up with Kanji curried vegetables. This is finished off with a papaya pickle.
