What You Need

1 cup peanuts (or 150 grams)
1 each of carrot (can be grated), cucumber, bell pepper, tomato, lemon
1.5 tsp salt
1 tsp pepper (or chilli powder)
1/2 onion


Steps:

1. Boil the Peanuts in a pressure cooker for 5-6 whistles (or 20 mins)
2. chop the veggies into tiny pieces
3. Add the veggies and peanuts into a bowl and add the salt, spices, and lemon juice. Garnish with coriander leaves

Pro-Tip

Feel free to add steamed sprouts, blanched greens, micro greens, raw mango, and replace spices with any type of vinaigrette per your preference. You can even add beans, chickpeas and other lentils to make it more filling.
