This is the first time I've come across a 'fermentary'. And I was fascinated. I have been familiar with the concept of sourdough bread for a while, and a good sourdough grilled cheese sandwich or focaccia is what happy stomachs are made of in my opinion. So of course, I was fascinated by the concept of Barmbay.
Yes another lockdown baby, this one's the brainchild of mixologist Ananth Nayak and Abhilasha Rajan, a pastry chef. Both have worked extensively in the food industry with popular restaurants over the last several years. And they've channelled their passion and experience into their food baby, Barmbay. All of their products are made with 100% sourdough starter which is cold-fermented for 17 hours (whew!) As a result they ask that you order between 24 to 36 hours ahead. Their menu features delish baked goodies like Sourdough Banana Bread, Kannelbullar ( a Swedish sweet bun), Foccacia, Sourdough Pav and more. That's not all, they also do fermented drinks like kombucha and ginger beer which is super refreshing.
