How about a culinary drivecation along one of Asia’s longest and oldest highways – The Grand Trunk Road? This month, Renaissance Mumbai, takes you on a journey along the 2500 kms historic highway from Kabul in the west to Chittagong in the east - the northern axis of the Indian subcontinent.
The Grand Trunk Road has been the lifeline since the ancient times for more than two and a half millennia and eulogized by great emperors, tradesmen and writers. Connecting Afghanistan, Pakistan, India and Bangladesh thisiconic trade route is famed for its diverse climate, fertility of land and availability of natural resources. Along the route civilizations thrived and grew as did the culture,
beautifully hemmed in, refined and enriched.
The cuisines found along the road too have a unique and diverse story to tell. Renaissance Mumbai is showcasing the grandest of the Grand Trunk Road with a specially curated menu of delicacies from each region. These master chefs have curated a set brunch menu featuring the forgotten favourites.
The selected delicacies include: Kata-kat - A hidden gem from the dhabas of Lahore, tender lamb & offals/soya chaap hand minced over a tawa using special spatulas, Chaapli Kebab - Mughal influenced flat minced patties originating from the Pashtun cuisines of Kabul, choice of lamb/subz, Karachi boti kebab, Sindhi Shammi Murgh Dhabewaali daal and more.
Vegetarians too are spoiled for choice as the set menu offers all courses in mouth-watering reinvented recipes.
Rediscover traditional cooking techniques such as ‘SIGRI’ A flat open stove of cast iron, using charcoal as the cooking medium and kebabs cooked in flat metal skewers over the dying embers. ‘HANDI’ Food cooked in the dhabas in traditional deep mouthed vessels made of clay/ bronze which imparts its signature aroma and the goodness of tradition into the food. ‘LAGAAN’ Heavy duty thick walled copper vessels used specially to retain extra heat for slow cooking of meats and spices and ‘KANAK’ Traditional breads from the clay tandoor ovens.
