Queen Margherita’s in Malad is a chef and banker Pratik Agarwal’s passionate experiment in giving the overwrought folks in Western Mumbai a taste of true Neapolitan pies in his tiny yet colourful pop-up restaurant (seats about 8 to 10)
And he leaves no stone unturned in ensuring that his product is the best you’ll find in the radius of 20 km. Also, the accessible price point of 250 is enticing enough for millennials.
The San Marzano tomatoes come canned straight from Italy, and it can't get better than that.
Trivia: San Marzano tomatoes are grown in the volcanic soil of Mt. Vesuvius in San Marzano Sul Sarno, Italy. The sauce is on point and I loved it.
The wood-fired oven weaves its magic on the dough, giving it a plump and crunchy crust and gorgeous leopard spots!
And fresh buffalo mozzarella is a no-brainer really, cuz it is Neapolitan!
Also makes it's wholesome.
Hail Margherita di Bufala.
The chef also does a rolling chef’s special menu once every quarter.
We tried the ‘White pizza’ with a rich ricotta and spinach cream, premium mozzarella, bright and fresh jalapeños, olives, pickled onions, sweet corn beads and Parmesano. This one doesn’t use San Marzano, and the flavours of spinach, ricotta and fresh jalapeños pop.
They use a temperature gun to ascertain that your pies come out of the oven at the perfect temperature. Yes, it's a serious business.
The garlic bread too is on point, and they bake is similar to a pie.
While the mascarpone Tiramisu is really good, it could use some strong coffee flavours overall.
If you happen to be in Western Mumbai, it’d be a blunder not to have their classic Neapolitan pie. Don’t say I didn’t warn you!
As for the pies themselves, I say Shine on you crazy diamond.
