What’s a cheese sandwich, really? Just two mere pieces of bread with a slice of cheese hastily slapped on to it and to be consumed on the go? Professional sandwich maker, Nuzha Ebrahim from Mumbai definitely thinks not.

Always. Run by Nuzha, The Fromagerie is a little home-run cheese shop, that’s having a little fun with your run-of-the-mill grilled cheese sandwich, pairing it with delicious combinations. They have a four-chilly cheese toast with mushrooms and a few spices {INR 225}, a toast using caramelised onions, roast mushroom and emmenthal. You can also decide between a tomato olive caponata sandwich with roast summer vegetables and brie or a wine poached pear with walnut crumble and goat cheese.

Need something more? How about a berry compote sandwich or a simple caprese sandwich with cheese? They’re even willing to have a conversation with you and experiment with the ingredients, according to what you like.

The bread used is a pain de mie {a milk load used for vegetarian sandwiches} and a buttered brioche for the non-vegetarian ones, and the cheese used is of an imported variety but they soon hope to switch to the wonderful local cheese-makers in India.

Now, the thing is, since it is run from a home in Colaba, you have to place an order for a minimum of ten sandwiches for it to be delivered. They prepare the sandwiches, wrap them up and send them across, and the only thing you have to do is spread a little butter and toast it on the pan. This is so that it remains fresh and crispy.
