Fireback is the newest place on the block and one you shouldn't miss out on if you enjoy the finer things especially when it comes to food and leisure. The upbeat restaurant-bar is a tranquil sanctuary that speaks fluent luxury (which is kind of expected when the place is launched by EHV International hospitality group, the company behind stellar restaurants like Indian Accent, Hosa and Comorin) with a sophisticated ambiance that will not fail to impress.

Hidden behind an old Portuguese bungalow in Siolim, Fireback's modern glass house steps down onto outdoor decks overlooking the river and what we consider to be one of Goa's best views, with the stunning St. Anthony's Church to the right.

The food menu, conceptualised by Michelin Chef David Thompson, is as good as it gets, with authentic Thai preparations perfected to the T using freshly sourced local produce with strong emphasis on traditional culinary techniques, particularly fire-grilled cooking (thus the name, Fireback). The place is also inspired by the Thai national bird — the Siamese Fireback.

Each dish is packed with flavours, hints of smokiness and loads of aroma, thanks to the use of super fresh ingredients (especially the lemongrass and fried garlic bits). Our favourites from the menu were the Smoky Eggplant with Gorlae Sauce, Crispy Squid, Massaman Curry and the stars of show (for us) — Pineapple Som Tam and Miang Kham, two small plate dishes that are an explosion of tangy, sweet, spicy and tart flavours and are a joy to hog on a hot summer afternoon in Goa, overlooking the river shimmering under the sun. Overall, they have some truly outstanding dishes that are both unique and authentic, and will change your perception of what you thought was authentic Thai cuisine.

The cocktails are also equally enjoyable, with straightforward concoctions that highlight simple flavours and complement the food. Our favourites from the cocktail menu are the 'Spiced Bourbon Sour', which is strong but not overpowering, fruity due to the fig, and slightly sour. Overall, it was a layered flavour profile that leaves you wanting more with each sip, as well as the 'Lemongrass', a simple yet refreshing drink made with coconut, carbonated water, lemongrass, and agave.

It's safe to say that if you are in Goa and want to hang out with your friends while enjoying delicious Thai food, well-crafted cocktails, impeccable vibes, and a breathtaking view, Fireback should definitely be on your radar.
