Every day India might be evolving in its culture, discipline, tradition and people, however, even now as formerly it takes your breath away, daily, with its mystical transparencies of every single thing. Correspondingly, the similar fashion can be discerned visually in cuisines of this country.

In India, there is a dish on all occasions which can complete a meal to suit any kind of palette. And, that is the beauty of Indian cuisine. Where we have spicy delicious foods; in addition, we also have plain bland dishes which still tastes exotic. Even there are sour and bitter delicacies as well. Similarly, there are healthy, yet tangy delectable cuisines available in every corner of this country. You name it, India offers that to you.

India's cuisine might be 5000 years old, but it's still transforming and adapting on a daily basis to leave open-mouthed of every gourmet. Indian cuisine has not lost its originality, rather gained and assimilated infinite unique tastes, and influenced by changing cultures, changing geographies, Mughal rule, European colonization, travelers. Similarly, this particular dish named Biryani, has evolved a lot. And at present time it's one of the major and beloved main course among the cities of Uttar Pradesh, Punjab, and West Bengal, to a great degree.

Biryani, in the general run of cuisines, has been hand-picked by every restaurant of the above mentioned states. And that has marked change in its form, nature, appearance, and taste. In the same way, Zaareen has presented itself unexpectedly in great surprise and wonder for its brilliant role, played in bringing about a result and helping this particular dish to advance and prosper among all epicureans.

As a consequence, being an entrenched epicure I had to savor its amazing attainments. And for this reason decreed for the following accomplishments:

Gosht Dum Biryani, is a popular Mughlai recipe prepared with mutton, potato and egg, along with aromatic basmati rice, yogurt, onions and melange of Indian spices, and finally put together in dum. Oh ho ho ... Khushbuuu..... (Oh..oh..oh...What a whiff) Imperial indeed!

Prawn Masala with Naan: Prawn masala is classic yet rich and, like many Indian dishes, it is always packed with flavor. The recipe was quite easy, where prawns were cooked in a spicy masala gravy with a delightful blend of herbs and spices. And later on, presented with amazing soft and fluffy oven-baked flat breads. Delectable duo!

Kadai Paneer: Here cubes of pappy paneer were simmered in a semi dry curry made with capsicum and Indian spices. As a result, the exquisite flavour of this dish came up from freshly pounded coriander seeds and Kashmiri red chillies. Noteworthy claim to fame.

Prawn Biryani, a fare specially knocked up with two big pieces of prawn, prepared on dum with flavourful basmati rice, in addition presented with raita to provide and additional flavour to its pack. I never tasted or occurred to smack it previously, however on the account it was the dish of the day. Absolutely terrific in great size, amount, and intensity.

Shahi Firni,  is a royal dessert rustled up by adding saffron, khoya to the usual ingredients of phirni. Phirni is a typical Indian sweet which is made in North India on major ocassions such as Karwa Chauth, Diwali et al. Here it was made out of ground rice, thickened milk and dried fruit. And later on served in those small earthern bowls. I love the smell of earthern vessles and it gives this dessert that nice Indian touch.
