What Is It?
Pig Boss started off in Pune as a weekend takeaway service of the most ingenious pork preparations, and the best part is, it’s now in Kolkata! Owner, chef, host and pork-addict Angona Paul brought her venture to the City of Joy {and pork lovers!} last September and has been doing a pop-up every month since November 2016.
Why Should I Go?
Because of the fresh new twists on pork Paul does. Each dish is prepared from scratch with recipes she has collected from family, friends, on holidays and even online! One of her pop-ups had an innovative amalgamation of the east and the west – Sriracha Pork Banh Mi, Pork Liver Pate, Cambodian Pork Amok, Vietnamese Summer Rolls, Pork Belly Chunks In Rum Honey Sauce, Irish Style Stew with Beer and Bacon, Pork Amsol, Tripura Style Pork Bharta… whew, the list just goes on!
Where Is It?
After a small hiatus of two months, Pig Boss is now back with the much-awaited The Whole Hog July Pop-Up, this Sunday on July 30, at 1pm, at the Upohar HIG Complex. The cost per head is INR 1,000. This month, Paul is all set to go full desi – giving the menu a quintessential Indian twist with dishes like kheema chops, bacon-kheema pav and pork pulao to name a few.
