The Caramelised Toffee Almond Vanilla Cake. With nothing to compare it to and absolutely no supposition in my head, the beauty turned out like none other that I have ever tried. It’s more of a tea-cake, with a spongy base and a thick layer of caramelised toffee on top. The density of the base can give a lot of vanilla sponge cakes a run for their money, they DO NOT seem to dry up/dessicate even hours after preparation, and that’s rare.
It’s crumbly but definitely not difficult to handle. The top layer is nutty, crunchy and if explained in a desi way (very chikki like). Loved, every bit of it.
Tip- As shared by the man himself, you could also try and heat a slice, top it with a scoop of vanilla ice cream and dig in. I tried this and the gooey-ness made me cry. It’s just the solace you need if you are too worked up and sugar happens to be your poison.
