The Plum Cake recipe she uses has been in her family for over a hundred years, and was passed down from her grandmother. All the fruit that goes into her Plum Cakes is soaked for over five years! That's correct - a rich selection of fruit, including raisins, currants, cranberries, dry fruit, prunes, dates, figs and apricots are soaked in a cauldron mixed with brandy and dark rum. Finance expert turned baker Amandeep Kaur started El Pastel out of her passion for baking in 2015. She bakes everything from customised cakes, wedding cakes, and specialty desserts. The baker's plum cakes are made of dry fruit that has been curated for over a year. The cakes have a mix of prunes, dates, figs, raisins, cranberries, blueberries, black currants and are basted for a few days/weeks with a generous amount of rum and brandy.
