The name comes from the word kabasa which literally means to press or squeeze, alluding to the technique used in the cooking where all the ingredients Like Rice, Meat and Stock are all cooked in one pot.

The spices used in kabsa are largely responsible for its taste; these are generally black pepper, cloves, cardamom, saffron, cinnamon, black lime, bay leaves and nutmeg. The main ingredient that accompanies the spices is the meat, but here it's a little different as the meat contains a lot of fat, yet again its ridiculously tender, boiled and seasoned well. The rice is more flavoured with saffron and tomatoes to get a delicious and tangy taste. You can have any kind of meat like chicken, mutton, seafood or camel. Garnished with fried dey fruits and served with tomato sauce, or curd (sometimes)
