Good Old Custard

Milk Custard has always been our go-to dessert when it comes to family gatherings! This time, make it more nutritious with the advantages of Camel milk {get prepared to share your recipe secrets}.

Ingredients

For Custard:
230 g whole eggs
1 vanilla bean
25 g sugar
600 ml camel milk
50 ghee

For Jamun Sauce:
250 gm sugar
250 ml water
6 pieces of cardamom
200 gm jamun berries
2 tbsp rose water

Instructions

To make the custard:

  • In a bowl, whisk the eggs, vanilla extract and sugar together until well mixed.
    • Pour the milk into a saucepan and gently heat.
    • Once heated strain the milk through a fine sieve onto the egg mixture in the bowl.
    • Whisk together until smooth.
    • Cook in the oven for about 20-30 minutes at 150*C.
    • The dish is done once the custard is set.

To make the Jamun Sauce:

  • Prepare sugar syrup using sugar, water and cardamom.
    • Add the berries into the syrup and simmer until soft.
    • Strain through a sieve.
    • Flavour with rose water and cool.
    • Drizzle the sauce on the camel milk custard and serve it fresh.

Tofu Treats

Tofu has never felt this light in texture and right in flavour.

Ingredients

400 ml camel milk
10 gms sugar/ brown sugar
4 organic eggs
100 ml soya milk
5 gms salt
2 gms white pepper powder

Instructions

  • Mix all the ingredients.
    • Stain and Steam for 12 to 15 minutes.
    • Camel milk tofu is ready.

Burrata With A Hint Of Orange

This dish is an innovation in itself by Chef Nishant Choubey and the best part is, it’s lactose and gluten free. Get to preparation people!

Ingredients

3.75 litres of camel milk
1/2 tsp calcium chloride
2 tsp citric acid
1/4 tsp liquid vegetarian rennet
2-3 tsp heavy cream
1/2  tsp salt
2 to 3 orange slices

Instructions

  • Boil the camel milk in a thick bottomed pan.
    •Dissolve citric acid and calcium chloride in approximately 500 ml of water.
    •Add it in pasteurized camel milk {preferably from Aadvik foods}
    •Let the mixture sit without any stir for some time.
    •Slowly the milk will turn into thick curd.
    •Use muslin cloth to remove the curd from the whey (left over liquid).
    •Mix the curd with heavy cream to ensure the texture is received.
    •Roll it inside the orange slices.
    •Serve chilled.

Milk Cake FTW!

Ingredients

1 litre camel milk
1/2 tsp tartaric powder
1-2 tsp lemon juice
100 gm sugar/ grated jaggery
1 tsp corn flour
6-8 threads of saffron soaked in 1 tbsp water

Instructions

  • Boil the camel milk; add tartaric powder, pinch by pinch, with the lemon juice until the milk begins to curdle.
    •Reduce liquid by half. Stir in sugar. Continue cooking until mixture thickens.
    •Sprinkle in corn flour, dissolved in a little extra milk.
    •Simmer for a further 3-4 minutes. Stir in saffron.
    •Spread out onto a greased tray in a layer 1 1/2 ” thick; or on a transparency sheet and let it cool.
    •Decorate with silver leaf, cardamom powder, dried fruit and a drizzle of cream before serving.
