What Makes It Awesome

Felt like eating healthy for lunch, so I ordered the Baked Aubergine and Chickpea Salad from Salad Days. What I received was a dense mix of boiled chickpeas, lettuce, and thin sliced roasted eggplant, topped with nachos and feta cheese. 🤤

The chickpeas were firm to bite and not too mushy, and they didn't stuff the salad with lettuce to overcompensate {looking at you Subway}. Surprisingly, the feta and nachos held through the summer heat and didn't create a soggy-topping-fest.

All in all, it's saved to my LBB for repeat orders!
