Ten Second Takeaway
Delhi's favourite diva, chef Ritu Dalmia has opened yet another restaurant, this time at Sangam Courtyard. We're digging the cosy interiors at Cafe Diva, the partially-open kitchen and of course, everything that comes out of it.
Nibbles of cheese, pizza and desi
If cheese is your jam, you will be very happy dining at Diva. From the salads to the starters to the mains, you can taste a sprinkling of it across the menu. Start with a bruschetta or a salad {we're partial to the Millet and Roasted Pepper Salad which has a slight taste of chaat}, move on to a thin crust pizza {we nominate the Turkey or the Verde} or ravioli for the authentic Italian experience. If you want to stay closer to your roots, consider the Kerala Style Fish or the Chorchori Begun Bhaja.
Pair these with wine {you can always ask the staff for help if you're a little clueless here} or blindly order their winter special Mulled Wine.
Leftovers are great to cook with
As stated candidly by the chef herself, we were amazed to see what she can whip up using leftover pizza dough and veggies. The Zeppoline comrpises fried dough balls stuffed with mozzarella and vegetables that didn't make it to the mains. Inspired?
