I sat down with Chef Jerry Thomas at the newly opened P.F. Chang’s in Gurgaon’s DLF Cyber Hub for a conversation about the outlet, the thought behind the space and the menu, and essentially to understand what folks in Delhi can expect the food to be like. I expected the conversation to be short and sweet and very much on the subject. What I got instead was an entire podcast-worth of his insights on the Indian food and beverages scene, his hot takes on coffee, chai, and feni, and a certain mutual nerdiness about the food market that only comes from a place of passion (from him) and intrigue (from me).

If you are not familiar with the man behind some of your favourite restaurants, allow me to put a face to the immaculate vibes. Chef Jerry heads Ministry of Crab, Pizza Express, The Runway Project, The Bandra Project, Chilis India, and now P.F. Chang’s. While sharing his favourites in the Indian food scene, he admits that he is a ‘Bombay Boy’ through and through, although he has fond memories of Delhi from his days at Oberoi Hotels. He is not finding his footing back in the city slowly and steadily.

What I loved most about the conversation was that although we were clearly there to talk about P.F. Chang’s, I can confidently say he neither showed any bias nor made attempts to stick to the subject, and gave recommendations he genuinely believes in. Here are some of Chef Jerry Thomas’ favourite local spots, mostly in Delhi and Mumbai.

Favourite Spot For Cocktails

I love the cocktails at Lair. I love Navjot’s cocktails (Navjot Singh, Beverage Director at Lair, New Delhi). I have also been going to Comorin a lot these days for their cocktails.

But I’m a Bombay boy, and although it is not a cocktail bar, Bombay Canteen is home for me. It is the only place I eat out and I love their cocktails as well.

Favourite Place For Asian Food In Delhi

Apart from PF Chang’s, I love China Kitchen, it is my go-to for Asian food. If I’m in Bombay, it’s China Garden – very old school hakka style of cooking and the closest you can get to Tangra is China Garden.

Favourite New Restaurant In India

Papas Bombay and Veronica are absolutely killing it. Hussain (Chef Hussain Shahzad of The Bombay Canteen, O Pedro, Veronicas and Papas; Conde Nast Traveller’s Chef of the Year 2023) is killing it. He’s a dear friend, but honestly I think his concepts are phenomenal and they make dining fun, even in a fine-dine format.


Favourite Spot For Ramen

Naru in Bangalore is good. I feel that’s the way to go, it’s the same way with Papas. You serve limited spots and even though you sell out fast and have limited space, you serve great food. It’s more experiential too. I like Kuraku as well.

Favorite Spot For Desserts In Delhi

I don’t eat desserts, I don’t have a sweet tooth as such. But every time I go to Comorin, I get their Malai Chili Toast. If I ever go out for dessert, it would be that.

Favourite Tasting Menu Spot In India

I don’t want to sound like a snob, but no one does it like Indian Accent.

Favourite City To Travel To For Food

Hong Kong for the food and Singapore for the cocktails. The street food in both cities is amazing.


Favourite Dish To Cook When He’s Strapped For Time

I’m a Mallu boy at heart, so it’s always one pot chicken curry with lots of coconut milk. It’s the only thing I like to cook at home.

Favourite Drink To Pair With Sushi

Sake. But I’m a Negroni kind of person, it goes well with anything. Or a dry martini too.

Favourite Drink When He’s Hosting

Negroni.

Favourite Indian Beer

Kingfisher. Not much else is quite as satisfying as Kingfisher.
