As I have grown up, I have accepted the hard truth — our house is a black hole where no amount of money ever spent is enough. One space in our house that truly deserves iconic upgrades, it's the kitchen. Sure, we all know the basics and also have them to get by, it's always good to know what's fresh, functional, and chef-approved.

We recently spoke to celebrity chef Vicky Ratnani, aka the 'Gastronaut' for his globe-trotting culinary ventures and TV shows like Vicky Goes Veg (NDTV) and Vickypedia (LivingFoodz). With the launch of his new restaurant, Omny Kitchen & Bar in Gurugram (which we loved), we thought of picking his brain about some of his kitchen faves. Say it with us — when we love someone's work, we have to know their go-to's. Let's dive into the kitchen secrets this genius spilled.

Favourite Kitchen Gadget/tool

My favourite kitchen tool would be my collection of knives which I have got from all over the world. I also love my cast iron pots and pans, Staub and Lodge are my favourites.

Favourite Knife

If I could recommend just one high-quality chef’s knife it would be Wüsthof classic iron from Germany. But Miyabi from Japan, and Takeshi Saji are also exceptional options.

Favourite Kitchen Brands

While I love all the brands in my kitchen, I absolutely adore Global for knives and Paderno for pots and pans. In my studio, I use Smeg and it's one of the best.

Favourite Air Fryer

My favourite air fryer ever was the first one I used—the Philips Air Fryer. It became a complete game-changer for me.

Favourite coffee machine or blender

I use the Smeg bean-to-cup machine at home. But if there's one that I would love to get, it is a Jura.  Also, KitchenAid blenders are my go-to.

Favourite cookware material and cookware brand

I like to cook in cast iron enamel as it has great heat retention and timeless durability. I love Le Creuset in this department, they are classic, beautiful, and extremely functional.

Favourite Artisnal Tool

If I had to pick one Indian kitchen brand or artisanal tool it would be the String Hopper maker or noodle extruder for idiyappam.

Favourite Kitchen Indulgence

I genuinely believe that a Thermomix is a luxury brand that’s worth every bit for serious home chefs or cooking enthusiasts. It's also my favourite electric kitchen as it's versatile and does the job of many appliances in one.

Favourite Spice Grinder/Mortar-Pestle Set

I use my grandmother’s mortar and pestle and a Molcajete I picked up on a trip to Mexico.

Favourite Kitchen Appliance Under INR 5,000

IKEA 365+ Mandoline Slicer

499

Mandoline Slicer. It's a time-saving, precision tool that’s super handy.

Must-Have Dishes At Omny Kitchen

Definitely the entire Sindhi menu, the Burgers, the Pizzas, the Buff Carpaccio, Chicken Under a Brick, Just Jerk Chicken, Salmon Steak, Rainbow Trout, etc.
