This recipe makes for an easy lunch and is ideal if you're having a busy day. 

Ingredients:
For the salad:
1 bowl quinoa, boiled
1 onion, sliced
1 carrot, julienned
Handful fresh mint, chopped
*any other vegetables of your choice
For dressing:
2 tbsps of Happy Jars chilli chutney peanut butter
1 tsp soy sauce
2-3 garlic cloves, finely chopped
1/2 lime
For garnish:
Salted peanuts
Salt to taste


Method:
1. In a bowl, mix in all ingredients for the salad dressing. Add a little water and stir it till the consistency is creamy and easy to pour over and mix.
2. Mix all salad ingredients in a bowl and add the dressing. Add salt to taste
3. Garnish with salted peanuts
