At the pop-up, he will showcase his signature cuisine also called Gaggan, which is set over multiple courses, in a tasting menu format. The menu uses molecular gastronomy and unique techniques that bring a twist to plating and perception without compromising on quintessential Indian flavours. Teaming with the team at Varq, Taj Mahal New Delhi {in addition to Taj hotels across Mumbai, Bangalore and Chennai}, the bespoke 12-course menu will represent the various regions of India bringing in exotic ingredients, flavour and of course, seasonal stuff.
