If you love your fish and sushi is bae and you haven’t devoured the rolls by Chef Augusto at Town Hall yet; well, what have you been waiting for? Chef Augusto Cabrera has changed the sushi game in the city…and how! Here’s a sneak-peek into our favourites from his star-studded menu. PS: That’s not all; fill up the form at the end for an exclusive chance to win a one-on-one masterclass with the Master Sushi Chef!

You Maki Me So Happy

Hit the Sushi bar and order yourself one of Chef Augusto’s signature dishes, Kaizen Maki {“change for better” in English}. We’re talking a kickass combination of fresh Scottish salmon, japanese cucumber, spring onions and tempura flakes packed in forbidden rice served with spicy Togarashi sauce. Apart from being soft and tender, the sushi is an absolute delight to your palate.

Rollin' Like A Boss

Presenting, their Sushi bar’s showstopper dish, Kokana Maki. This smashing sushi is a combination of Otoro {the most expensive part of the tuna fish}, Chutoro, Scottish Salmon Belly, Kampachi Belly, Sturgeon Caviar, Flying fish eggs and Ikura Salmon Eggs {phew!} served with edible gold and silver leaves. Trust us, this one will take your love for sushi to a whole new level!

Not Just Sushi, There's More!

Not in the mood for sushi? Don’t you worry! Dive right into a burst of Japanese flavours with their Yellowtail with jalapeno in wasabi soy. Enjoy thin slices of young Amberjack {a.k.a Kampachi in Japanese} with chopped jalapenos and an epic {and Chef Augusto’s original} wasabi and soy concoction. Pair it with a glass of white wine, and make it the meal of your dreams.

Black Cod With Misu

Skillfully blending traditional Japanese recipes with modern flavours, Chef Augusto’s signature Black Cod with Miso is a must try! This Sablefish is highly prized for its intensely rich, buttery flavour, marinated with Miso paste, Mirin and Sake for two days. Being a tribute to world famous Chef Nobu and his contribution to Japanese cuisine, it’s probably the best of its kind that you’d ever have.

Town Hall Lamb Chops

Last but not the least, among our favourites, is Grilled New Zealand Lamb Chops served with Asparagus in Miso Anticucho sauce. This dish is so good that even the New York Times couldn’t help but feature it! The highlight of the dish, Anticucho sauce, has been carefully prepared by Chef Augusto with a delicious combination of Japanese and Peruvian spices and ingredients. So, chop chop! Head over to Town Hall when in G-Town!
