    What Makes It Awesome

    Babu Ram makes the most delish Daulat Ki Chaat I’ve ever had! He sets up his stalls at Dariba Kalan and Sitaram Bazaar during the winter. A Dona i.e. a big plate costs INR 50 and a kilogram cost INR 600. Babu Ram first cools raw milk mixed with cream on an ice slab overnight and then whisks the sweetened milk until frothy. It’s then flavoured with kewra, khoya, mawa and crumpled chenna. And the result? Air light, foamy and divine. It just melts on your tongue!
