-First, in a bowl, mix ginger and garlic paste, salt, turmeric and lemon juice. Marinate the turkey in this mixture for 1 hour.
-Next, dry roast red chilli, cumin, coriander, black pepper, fenugreek and cloves.
-Let this cool and then grind it into a fine paste with garlic cloves and onion.
-Now, heat the ghee in a heavy wok, add cumin, curry leaves, ginger and garlic paste to it.
Next, add the paste masala, salt, and tamarind pulp and continue cooking on a low flame for 30 minutes.
-Lastly, add the marinated turkey to this masala and allow it to cook well. Garnish with ghee & curry leaves.
