Bhapa Pora festival is all about steamed and roasted food cooked in the rustic style and Esplanade hosts this festival from the 17th to the 26th of November, 2017 In the olden days, cooking was done in clay ovens and the source of fuel was cow dung, natural coal, or wood fire. The process is as simple as marinating the meat or vegetables and wraping it in some sort of a parcel, be it a banana leaf, lotus leaf, pumpkin leaves, or plantain leaves and putting it in the clay oven for roasting or putting it in a steamer. This style is one of the healthiest forms of eating as there is minimal oil and no deep frying or sautéing is done. On the menu at the festival is Galda chingri shalmi for starters. The mains comprise of a choice of Shim, palanger bhapa, Mulo, narkel aar dal pora, Paddo pataye bhapa phulkopi and Begun pora in Vegetarian & Kankra, chingri palanger bhapa, Chingri narkel pora, Chalkumro pataye Elish narkel pora, Pomfret lanka achar bhapa, Bhetki, shim, beguner pora and Paddo pataye bhapa murgi in non veg options.
