Valley Cuisine

All set to attend a Kashmiri wedding feast in the city without even having to make that trek to Srinagar? Food critic and consultant Suresh Hinduja is making sure such gourmet extravagance is possible with his curated Wazwan feast at Punjab Grill restaurant.

Suresh is bringing to the city a legit Waza {or a Wazwan chef} called Bashir Ahmad who will cook up everything from Yakhni Pulao, Rista {lamb meatballs cooked in a spicy red gravy}, Tabak Maaz {ribs cooked in ghee and milk}, the Kashmiri Dum Aloo, Aab Gosht {lamb cooked in yoghurt}, Haak {Kashmiri greens cooked in mustard oil}, Goshtaba {minced meat balls simmered in yoghurt and spices} and more. Spices and other ingredients for this feast is being specially brought down from the Valley and includes saffron, chillies, cardamom, fennel, Mawal or cockscomb flowers, and even the Waza's own special vessels for cooking them in. We are already salivating in anticipation. Are you?
