Since the late 80s, the experimental township of Auroville has been busy churning out handmade cheeses on a daily basis while pursuing lofty ideals like peace and harmony. Milk is sourced from Auroville’s very own dairy and from farmers around before being pasteurised and made into cheese in a sustainable environment. At the end of it, a lineup of fresh and seasoned cheeses emerge. These include mozzarella, feta, ricotta, gruyere, cheddar and a handful of others.
