Red Velvet Kachori To Coconut Pavlova: Mumbai's Famed Modern Indian Restaurant Ziya Pops Up In Bangalore

What Is It?

If you’ve been to Mumbai, then you know the fuss about Ziya is. But if you’re clueless, then let us break it down for you. A contemporary Indian restaurant at The Oberoi in Mumbai, Ziya is the brainchild of top chef and three-time Michelin starred Chef Vineet Bhatia. Weaving in traditional flavours and processes but presenting it in a starkly modern format, the restaurant is popping up at Bangalore’s Oberoi until June 10, at Szechwan Court. Yup, and Chef Nayna Nanji will spearhead this festival.

Who Is It For?

Forget being a gourmand and ‘knowing’ food. If you like food, want to try different things and check out experimental Indian cuisine, head here. Sure it’s a bit expensive at INR 1,950 plus GST for the tasting menu, but you’ll want to skip the next meal. So it all works out! If you’re keen on tasting food that weaves in customany cooking techniques, with a spin on flavour, combination and presentation, then this one’s for you.

Why Should I Go For It?

When Chef Bhatia and his protege Chef Nayna are giving you their innovative best, why would you not go, really! There is a compact tasting menu — vegetarian and non-vegetarian, to pick from, and it all kicks off with a divine Kaffir Lemongrass Chilli soup. Shoot it like you would a Tequila, but only after you’ve let the goat cheese and cashew paniyaram soak it up a bit. Then comes chaat which is a black rice kachori, with pomegranate, strawberry and fennel yoghurt. We loved the beetroot kachori, that we christened Red Velvet Kachori! A succulent yet soft shank of lamb floored us, especially with the mushroom upma and the mushroom truffle ball it came with. In fact, a fellow diner loved it so much, she ate four! Vegetarians can look forward to a Chutney Paneer instead of the lamb, with the same accompaniments. You’ll be stuffed to the gills but the end, but under no circumstances can you skip out the Black Sesame-Saffron Kulfi, a coconut pavlova, mango-saffron shrikhand, drizzled with salted caramel.
