The first course is an Aam Panna, rather a perfect one with right proportions of Totapuri mangoes, jaggery and mint. A perfect concoction to begin with.
Have you ever heard of Raw Mango Tacos, they excel in making this one? Raw Mangoes seasoned with onions and bell peppers, with Panner Tikki cubes in the taco, it is a beautiful crunch on the pallet. Akki Rotti which is perfectly tossed is to be had next, accompanying the Akki Rotti, you have a ginger chutney which has a hit of red chillies and is a blast of awesomeness.
For the main course, there is Aromatic Basmati Rice, with a Mangalorean Mango curry. This curry is subtle, has subtle sourness, mild spice and mustard. Perfect to taste after the ginger chutney.
The final course or the dessert will be Aamkhand, rich on Mango. Mango cream, fresh pistachios and Alphonso mangoes make it a perfect dessert.
