With an array of cakes, galettes, pies and tarts, Sonya Balasubramanyam’s Pâte Sucrée is all about ‘baking the world a bettter place’.

Baking From Scratch

Sonya Balasubramanyam has no long drawn out, awe-inspiring story about how she began baking. This former journalist just woke up, one fine day, and decided to put on her baking mittens. And, going by her pleasing success with the very first recipe {one for bread}, she hasn’t looked back ever since. Armed with a Certificat de Pâtisserie de Base from Le Cordon Bleu in Bangkok, she started Pate Sucree {her home-baking venture, based out of Whitefield} around two years ago. A fan of the precision that comes with baking, Sonya follows the entire recipe and procedure to the T but is also up for some experimenting {it requires a complete understanding of the ingredients, she will tell you}. While you’ll find quite a lot of French-inspired and classic bakes in her menu, she also uses a lot of fruits. The ace baker is known to work magic with fresh strawberries and coming soon is her seasonal special: Mango Cheesecake.

Bake Me A Cake

Make sure you place your order atleast 48 hours in advance so that she gets enough time to shop for the ingredients and whip up the bakes you want. If the simple Carrot Cake {with Cream Cheese Frosting} isn’t really your thing, the decadent Devil’s Food Cake {a two-layered chocolate cake} is what you must try at Pate Sucree. The Lemon Yoghurt Bundt Cake also has its share of fans, we hear. You also get to choose from tarts, pies and galettes {sweet and savoury}, which include Dark Caramel Walnut Tart {a personal favourite of the baker herself}, Double-Crust Apple Pie, Bacon and Caramelised Onion Quiche, and Cherry Tomato and Feta Tart. Even goodies like brownies, cookies, muffins and breads find a place on Sonya’s menu.

At LBB’s first ever Dessert Bazaar this year, Pâte Sucrée sold out in two hours. Thankfully we had already laid our claims on Sonya’s sinful Babka, a Jewish yeast cake with plenty of chocolate. We feasted on her cake for a few days, and as time went by, the flavours intensified and tasted even better. We are going back to her soon for more.
