What Makes It Awesome

What does a corporate executive with a passion of pasta do for fun? They start making fresh pasta at home and creating a brand out of it. Ayesha Seksaria took her love for the pasta to the next level by starting weekend delivery of ready to cook, fresh handmade pasta and even added a small selection of sauces to go with them simply because she couldn’t find a product like this in the local market. The brand? Pasta Dal Cuore, which means pasta from the heart.

It was her years in the US where she made fresh pasta with her dad on a regular basis coupled with a mini-course in Italy while on holiday that created the foundation for her brand. She believes that once you have fresh pasta there is no turning back and I agree with her! I ordered the Spinach & Ricotta Ravioli and the Three Cheese Ravioli and both turned out divine, all I did was adhere to the cooking time suggested on her packaging and within minutes I had two kinds of divine pasta ready to be dressed, sauced and devoured. I also ordered the Basil and Chilli Tagliatelle and my first impression was that it was rolled to an ideal thickness and the aroma of both the basil and chilli were rich and apparent. The Tagliatelle had a shorted cooking time and I whipped up a creamy sauce to pair that with so the infused flavours of the pasta really stood out. 

Pasta Dal Cuore also offers a range of sauces to go with the pasta, so you don’t have to do a thing except perhaps add your choice of meats. I chose the Vodka Sauce which is red and rich with just a hint of the aroma of vodka left behind after all the stewing, in my opinion it goes best with the Three Cheese Ravioli though I should try it again with the Pumpkin and Parmesan variant as well.  They also have a Blue Cheese & Mushroom one which I feel would go best with a basic Pomodoro. In the sauces range, you can choose from Pesto, Alfredo and Mushroom, and Pomodoro Aglio Olio as well. All in all, it’s a great concept to enjoy a fresh, homemade Italian meal that takes less than 15 minutes to put together. 

What Could Be Better

Since it’s not fair to ask a vegetarian kitchen to include a non-vegetarian option in their menu, the only other thing I found missing was a few more artisanal shapes that are typical to hand-rolled pasta. Also, the ravioli cooking time could be increased since sometimes the edges tend to remain chewy.

Pro-Tip

These are frozen, so it’s a good idea to stock up when you order and justify delivery costs. They thaw well and cook just fine so it’s a good idea to try a few at a time!
