We all have heard and eaten Korean Kimchi, but, have you ever tried the Pahadi Kimchi. Why just try, you can even learn to make it at home! Sign up for this Pahadi Kimchi Workshop with Honey Islam happening on September 24 at 3 pm via Zoom. Honey Islam, the head brewer and fermentation expert of Mountain Bee Kombucha will be teaching us her heirloom recipe of Kimchi. She will be teaching how make pahadi kimchi - a fermented pickle of spiced vegetables. The ingredients that one would use are fairly common and available in any Indian kitchen pantry. The recipe is inspired from her grandmother's favourite spice-mix.
You will need:
Cabbage - green, red, napa any variety
Some carrots
Optional produce - radish, cucumber, spring onions, apples, celery, ginger
Spice mix - red chilly, cumin seeds, garlic, salt, onions

A chopping board
Sharp knife
Glass jar with lid
A shot glass/fermentation weights to keep vegetables pressed under liquid (more techniques in the workshop)
